light, refreshing and pale dry rose (Cinsault, Syrah, Grenache) comes from the dynamic Chateau Capendu property not far from the fortified city of Carcassonne. Didier Ragaru, the owner, is a great

181 Devois de Perret Assas, 2006 AOC Coteaux de Languedoc 5.35 Assas is a small cooperative enterprise situated on the
southern slopes of the mighty Pic St Loup to the North of Montpellier. The conditions around the Pic are ideal for wine-making and there are many excellent properties, some commanding important
prices. The vines are grown on these famous slopes and the quality is super. The blend is 80% Grenache, giving red fruit flavours and suppleness, and 20% Syrah, giving hints of blackcurrant,
some structure and wonderful flashes of blue. With a modern label and a traditional bottle, this is an excellent all-rounder rosé, great by itself or with food. Best served around 8-10C
406 Ressac Le Rose de Syrah 2006/7 VdP d’Oc 5.90 Made by Sebastian Martin. With a superb deep rose colour
tinged with hues of violet, this varietal Syrah (Shiraz) wine has a wonderful subtle nose with tones of blackcurrant. Its flavour is powerfully fruity, with an excellent balance between acidity and
sugar, giving a supple, fresh and youthful experience. It is ideal for all-year drinking, since it is enjoyable at a wider range of temperatures than most reds and whites and can be served with a
great variety of delicacies, or by itself as an aperitif. If you are sceptical about rose, start here.

as an aperitif, with fish and white meat and for barbecues. Made by Giles and Ruth de Latude.
556 Chateau du Donjon Rosé 2007/8 AOC Minervois 6.20 Jean Panis is both an excellent wine-maker and an energetic,
enthusiastic person who is a pleasure to do business with. It is therefore no surprise that Amphora now stocks seven of his wines. This great value rosé is a blend of Cinsault (40%), Syrah
(30%) and Grenache Noir (30%) and should be drunk fresh, at around 10 – 12C. It has delicate scents of red fruits, which then develop in the mouth with a good balance of fruit and
freshness. It is most remarkably the only rosé awarded Minervois AOC status, a tribute to Jean’s skill and determination to produce great wines.

Sauvignon and 10% Vermentino. It is a fresh wine with a fruity nose, with flavours of strawberry, raspberry and English bonbons. It can be aged for 3 to 5 years and will marry well with salads,
